Small Chops

I went to the Filipino Souk here in Doha and I got myself a large goat leg. I asked them to cut it into small pieces as I don’t have a deep freezer to keep it in. I wish I had a roasting spit in my back garden, sigh! Well I have got a smoking unit and I am sure I can do some wonders with the goat meat.

I know right now some friends of mine are at a wedding in Lagos and I am very sure they are on the 5th plate of small chops. As I don’t want to be left out of the fun, I decided to make some small chops, well not exactly the whole package, just the asun part.

Asun (Smoked Goat Meat)

Ingredients:

500g of goat meat, cut into small bite size

1 medium tomato, deseededIMG_4830

1 ata rodo (scotch bonnet)

1 medium red pepper (capsicum)

1 tsp crushed garlic

1 tsp crushed ginger

2 medium red onions

1 Knorr cube

1 tsp salt

Directions:

Wash the meat and remove any excess fat, drain and pat dry. Rub the salt in the meat and set aside in a sieve on top a bowl for 20 minutes. This will help to remove any excess water.

Then smoke the meat. There are various ways you can smoke your meat if you don’t have a barbecue. I use a stove smoker but you can make yours. Here are various links of how you can smoke your meat on the stove:

Chop the tomatoes, red peppers and chilli finely. You can achieve the same result with a mortar.

Heat about 2 table spoons of oil in a pan, add the chopped tomato mix, garlic and ginger. Fry for about 5 minutes. Add the smoked meat, combine thoroughly and let it simmer for another five minute to let the meat flavour combine with the sauce. Taste the sauce before adding the Knorr cube, if the salt is enough then you don’t need to add the Knorr cube. Cook until the water has dried out.

Cut the onions in quarters and toss in the goat mixture.

Simmer for 2 minutes and serve hot. I actually serve mine with some spaghetti, it works so well.
